Recipe: Healthy Chocolate Black Bean Brownies
These flourless and healthy version of your standard calorific brownies are the perfect chocolate-fix and even pack plenty of fibre thanks to the black beans. Delicious as is or even better re-heated to allow the chocolate chips to melt! The best part? Each brownie is just over 100 calories making them an ideal snack, dessert or breakfast (because who doesn’t want chocolate for breakfast?). Plus, that even leaves space for a scoop of ice cream on the side if you really want… just maybe not for brekkie (or then again…)
Ingredients:
Makes 12 brownies
400g can of black beans, drained and rinsed
2 eggs
2 teaspoons of coconut oil
100g coconut sugar
30g organic, all natural cocoa powder
1 teaspoon of coffee (instant or ground)
50g dark chocolate chips (not optional)
Method:
Pre-heat the oven to 180C (fan oven)
Grease a square/rectangular baking tin (rough size to make 12 x 3cm deep brownies) - you can also use greaseproof paper as they can be sticky to the sides!
Tip the drained, rinsed black beans into a blender and mix until a smooth puree. I sometimes add a little water or almond milk to get a smooth consistency
Add the puree to a bowl along with the eggs and coconut oil
Add the cocoa powder, baking powder, coconut sugar and coffee into the bowl and mix together well to form a batter
Finally, stir in the dark chocolate chips
Pour the mixture into your baking tin and bake for around 35 minutes. Note - baking slightly longer will create firmer brownies, but baking slightly less will leave you with extra gooey brownies that re-heat perfectly when you went them!
Ensure the brownies have fully cooled before trying to cut them and remove from the baking tin
