No Bake Peanut Butter Oat Bites
If you’re a serious nut butter lover like me then you will be obsessed with these delicious peanut butter bites. They are super simple to make, require zero baking and make for a delicious snack with your morning coffee. They contain all natural ingredients, are packed with heart-healthy fats and contain just 58 calories per oat bite (warning, you won’t just want one of these…). Pre-make a batch and keep them in the fridge all week as a healthy, sweet and nutty treat any time of the day.
Ingredients:
Makes 20 oat bites
1 tablespoon of organic honey
2 tablespoons of Coconut Oil (I use GroovyFood Co. - always!)
3 tablespoons of Crunchy Peanut Butter (For this I used WholeEarth)
75g of porridge oats
20 Almonds
15 Cashew Nuts
1/2 teaspoon of vanilla extract
1/4 teaspoon of salt
Note: You can choose whatever nut butter and nuts you like and can even add in some dark choc chips or dried fruit!
Method:
Line a small, shallow baking tin with parchment paper.
Melt the coconut oil, honey and peanut butter over a low heat in a sauce pan.
Transfer this mixture to a bowl and add in the vanilla extract and salt.
Crush the almonds and cashews into small pieces (I used a pestle and mortar but you can chop these finely or place them in a sandwich bag and use a rolling pin to crush them).
Add the nuts and porridge oats to the bowl and mix all ingredients together.
If the mixture is a little dry, try adding a splash of almond milk or a little more honey. If it seems too wet, add a few more porridge oats.
Flatten the mixture into your baking tin until its about 2cm deep.
Leave to set in the fridge for an hour.
Remove from the fridge and using a sharp knife cut into 20 bite-sized pieces.
Store in the fridge for up to 5 days.
