Recipe: Peanut Butter Brownie Bites

Made with natural sweeteners these gooey peanut butter brownie bites are totally moreish and are the perfect energy fix pre-workout. Or of course with a cup of coffee as an afternoon pick-me-up. The sweetness comes from dates and organic honey and the smooth peanut butter and chocolate chips finishes them off, making them entirely indulgent with a little less guilt!

Ingredients:

Makes 15 brownie bites

  • 10 large dates, soaked

  • 3 tablespoons of all natural peanut butter (I used Pip & Nut, smooth peanut butter for this recipe)

  • 50ml unsweetened almond milk (I use Alpro)

  • 2 tablespoons of organic honey

  • 50g of coconut flour (I use GroovyFood Co. - always!)

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon vanilla extract

  • 40g dark chocolate chips

Method:

  1. Pre-heat the oven to 180C

  2. Grease a square/rectangular baking tin

  3. Soak the dates for 10 minutes in hot-to-boiling water for 10-15 minutes

  4. Once soaked, drain and de-stone the dates and add to a food processor with the peanut butter and honey

  5. Slowly add the almond milk and keep processing until smooth

  6. Add the coconut flour, baking soda, baking powder & vanilla extract

  7. Ensure the mixture is well blended and remove from the food processor

  8. Stir 30g of chocolate chips and spoon the mixture evenly across your baking tin. Sprinkle the remaining 10g of choclate chips on the top.

  9. Bake in the oven for 25 minutes. Leave to cool before removing from the baking tin.
